A super fun dinner or canapé for the party season!
1 packet Baby Bistro Big Eats Mum’s Meatballs
1 tub Baby Bistro Vege Lentils
1 packet Old El Paso Mini Taco Boats
12 tbsp grated tasty cheese
12 cherry tomatoes, cut in half
1 cup shredded lettuce
½ avocado, mashed with 1 tbsp lemon juice
Preheat oven to 180ºC. Line two baking trays with baking paper. Spread 12 meatballs onto one tray. On the other tray arrange the taco boats and fill each with 1 tbsp grated cheese. Put both trays into the oven, remove trays after 10 mins.
Heat Vege Lentils according to packet instructions.
To assemble, place a meatball into each boat. Top with lettuce, 2 cherry tomato halves, a spoonful of Vege Lentils and a spoonful of mashed avo. Serve immediately.
