A cheesy twist on a party favourite! Who doesn’t love popcorn? And while we’re at it, who doesn’t love parmesan cheese? Silly questions we know, so why not combine the two for a party if your mouth. Yum!

Makes enough for 10 cups

You will need:
6 tbsp coconut oil
1 cup popcorn kernels
1 cup dried grated parmesan stirred together with 1 tsp sweet paprika
Plastic cups/small cardboard popcorn boxes (available from discount stores)
A really big saucepan with a lid

Heat oil in saucepan over medium heat. To test if the oil is hot enough, add 2-3 kernels – when the kernels *POP* add the remaining kernels and shake to form an even layer. Cover immediately, remove from heat and count to 30 seconds.

Once 30 seconds is up, place pan back on the heat (covered – or else your kitchen will be snowing popcorn!). You will hear the popcorn start popping wildly! Every 30 seconds or so give the saucepan a good shake, holding the lid on tight. Cook until the popping stops.

Remove from heat, add parmesan and re-cover, shake really well to coat.

Serve divided between cups.
